The name ‘rocky road’ referred to the rough and bumpy roads people took to access the Australian goldfields during the Gold Rush.

How do you cut rocky road without breaking it?

Once your rocky road has set in the fridge, lift it out of the pan and onto a chopping board. Using a large sharp knife, firmly and confidently cut through the treat, ensuring you cut through any hard pieces of nuts. You can also allow the rocky road to sit for roughly 30 minutes out of the fridge before you’re ready to cut.

Ingredients (7)

  • 600g Woolworths Cooking Chocolate White, chopped
  • 250g mixed marshmallows, chopped
  • 2/3 cup (100g) dried cranberries
  • 2/3 cup (100g) pistachios, chopped
  • 80g macadamias, lightly toasted, chopped
  • 1/2 cup (45g) desiccated coconut
  • 250g pink Turkish delight, chopped

Method

  • 1.
    Grease a 20cm square cake pan and line the base and sides with baking paper, leaving some overhanging.
  • 2.
    Place chocolate in a bowl set over a saucepan of simmering water (don’t let the bowl touch the water) and stir until melted. Cool slightly, then fold in all remaining ingredients. Spread into the prepared pan and chill for 2 hours or until set.
  • 3.
    Use the baking paper to lift the rocky road out of the pan, then slice into squares to serve.
