White Christmas rocky road

If you can’t choose between White Christmas slice and rocky road, why not combine them both into one amazing treat? This White Christmas rocky road is perfect for anytime of the year, but also makes a great holiday gift for friends or family. Cut the slice into small bite-size pieces and wrap in boxes or cellophane bags. 

Recipe note: You’ll need a 20cm square cake pan and an 18cm x 28cm slice pan, and you’ll need to start this recipe at least 4 hours ahead.

Ingredients (9)

  • 4 x 180g packets dark (70%) chocolate, chopped
  • 400g marshmallows (we used pink and white)

White Christmas

  • 3 cups (105g) rice bubbles
  • 1 cup (90g) desiccated coconut
  • 1 cup (120g) pure icing sugar, sifted
  • 1 cup (100g) full cream milk powder
  • 1/2 cup (150g) mixed dried fruit (we used sultanas, currants and chopped dried apricots)
  • 1/2 cup (120g) red glace cherries
  • 250g copha, chopped, melted (see recipe notes)

Method

  • 1.
    Start by making the White Christmas. Line base and sides of a 20cm square cake pan with baking paper.
  • 2.
    Place all ingredients in a large bowl and stir until well combined. Spoon into prepared pan, spreading to cover base evenly, then press down firmly to level top. Cover and chill for 2 hours, or until set firm.
  • 3.
    Remove White Christmas from pan to a chopping board, then use a large sharp knife to cut off one quarter. Store one-quarter of the slice in a container in the fridge for another use (see recipe notes). Cut the remaining three-quarters into 2cm chunks.
  • 4.
    For the rocky road, grease an 18cm x 28cm slice pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.
  • 5.
    Place chocolate in a large heatproof bowl set over a pan of simmering water (don’t let base of bowl touch the water). Cook, stirring occasionally, until chocolate is smooth and melted. Remove from heat.
  • 6.
    Add marshmallows and half the White Christmas chunks to the chocolate and stir well to combine. Spoon mixture into prepared pan, pressing to level with a spatula. Top with remaining White Christmas chunks, pressing down into marshmallows. Refrigerate for at least 2 hours, or until set.
  • 7.
    Serve cut into squares.

Recipe Notes

Melt copha easily by placing in a large microwave-safe bowl or jug, cover with plastic wrap, then microwave in 30-second bursts for 1 minute-1 minute 30 seconds, until completely melted. 

You could replace glace cherries with whole dried cranberries.

The unused White Christmas can be stored in an airtight container in a cool, dark place for up to 1 week, or in the fridge for up to 1 month.
