1.Line base and sides of a 20cm square cake pan with baking paper.

2.Place all ingredients together in a large bowl and stir until well combined. Spoon into prepared pan, spreading to cover base evenly, then press down firmly to level top. Cover and chill for 2 hours, or until set firm.

3.Remove white Christmas from pan to a chopping board, then cut into 24 equal-sized squares using a large sharp knife. Lightly dust with extra sifted icing sugar, if desired. Serve or store in an airtight container in a cool, dark place for up to 1 week or in the fridge for up to 1 month.

Melt copha easily by placing in a large microwave-safe bowl or jug, cover with plastic wrap, then microwave in 30-second bursts for 1 minute-1 minute 30 seconds, or until completely melted. You could replace glace cherries with whole dried cranberries.
