   On-snow dining has never been so charming. Something of an institution in the Perisher valley is White Spider, a restaurant with dishes that punch above their weight, such as the vodka and beetroot cured salmon with yuzu gel and puffed quinoa.    The menu at Marritz is everything you’d want from a hotel restaurant with striking views – it’s generous with the carbs, liberal with the butter and plentiful with flavour. 3. High Ground Coffee
   We know you take your coffee seriously, and so do we. Just metres away from the village 8 ski-lift is High Ground Coffee Bar – the only place you need to go for your caffeine fix. Charlotte’s Pass

1. Stillwell Hotel
   After a morning on the blinding-white slopes, coming into the colourful restaurant at Stillwell Hotel is like walking into a rainbow. Lunch options are solid at this venue that serves primarily Mexican and Italian dishes.    You’d expect the highest distillery in Australia to create phenomenally pure spirits, and you’d be right. In the heart of the high country between Jindabyne and Thredbo is Wild Brumby, an award-winning distillery drawing on the alp’s super clean water and native mountain botanicals for its gin, vodka and schnapps. 2. Merritts Mountain House
   What are you doing on Fridays between 24 June – 2 September? You’ll want to make sure that you’re booked in to ride the alpine gondola to Merritts Mountain House for a Bavarian feast. Located at 1660 metres, you feel as if you’re dining at the top of the world in this traditional European restaurant with enormous deck.    There’s nothing better than a burger after a long day on the slopes (or frankly, even if you’ve just had a short day on the slopes).
