Luxury Astra Lodge in Falls Creek is one of the most perfect locations for hitting the slopes in Oz, and it’s now even more of a must-visit, with newly refurbished luxury rooms and a gorgeous day spa. Not only that: for the next two weeks, Astra Lodge will welcome to the kitchen head chef of London’s Elystan Street restaurant, Toby Burrowes. While at the lodge, Toby will collaborate with executive chef Kate Duggan on a fine-dining Euro menu that will go above and beyond what you’d expect après ski.

After a stint cooking in the ski town some years ago, Toby moved to London and spent four years working his way up the ranks at Phil Howard’s Michelin-starred restaurant, The Square, moving to head up the kitchen at Elystan Street when he’d earned his stripes.
With serious pedigree under his belt, you can expect the special collaborative menu at Astra Lodge to showcase local produce, such as Victorian truffles, which will be shaved into a butter sauce and served with slow-cooked egg, eschalot crumb and shimeji mushrooms. You’ll also find delights like crispy-skin duck paired with cherry and endive, and seared venison and pickled walnuts with a pear tarte fine. To get you settled après ski, a new-to-the-menu smoky bacon bloody Mary is just the ticket.
