This winter, Halcyon House is heating up with a relaxed weekend of wining, dining and poolside loafing.

The boutique beachside hotel with that dreamy Mediterranean pool and chic Californian surfside motel vibes (think nautical sun loungers, manicured lawns and crisp white umbrellas – there’s enough Instagram opps to poke a selfie stick at) has teamed with Guillaume Brahimi to offer a gourmet weekend getaway.

The frivolities kick off, Friday night, with poolside drinks, followed by dinner at their two-hatted onsite restaurant, Paper Daisy. Executive chef Ben Devlin (ex-Noma) has made his stamp on regional Australian dining by celebrating local, coastal ingredients (pipis, lemon myrtle, beach plants and wattleseed all feature) but not in a faddish way: the food at Paper Daisy is clever, confident, relaxed and entirely delicious.

Recharge in the morning with breakfast and a stroll along the secluded sounds of Cabarita Beach, before settling into a masterclass with Bistro Guillaume’s Brahimi. You’ll learn to recreate favourites from his book Guillaume: Food for Family; let’s face it, we could all do with a gentle nudge in the repertoire-expansion space at home. All of this is building up to Brahimi’s showpiece dinner on Saturday evening, when the chef will flex his lauded culinary skills over a meal to remember.

“I can’t wait to return to Halcyon House in June. It’s such a beautiful, relaxed place and the dishes I am cooking reflect that informal elegance – simple local produce cooked beautifully, with a focus on seafood,” Brahimi says in a statement.

Luxury packages start from $1790 and include two nights’ accommodation; breakfasts both days; ‘Welcome Drinks’ on Friday night; a ‘Light Lunch’ and ‘Showpiece Dinner’ on Saturday night prepared by Guillaume Brahimi and tickets to the master class.
