Sapphire Coast resident Merimbula may boast a slew of beautiful beaches and lakes, but it’s seafood for which it’s famed. No trip to this part of the world is complete without indulging in some oysters – it’s the region’s specialty after all. Or paying a visit to one of this stylish coastal town’s many wine bars.

Home to some of Australia’s most delicious oysters, Narooma on NSW’s far south coast is fast-becoming a foodie hotspot. It was made official when Merivale moved into town and took over The Quarterdeck restaurant, which sits on the water on the Wagonga Inlet. The restaurant group also took over The Whale Inn where an offshoot of beloved Sydney Cantonese restaurant, Queen Chows, now resides (it goes by the same name). Pair this stunning dining offering with crystal waters, hidden beaches and pristine snorkelling spots, Narooma is an easy sell for a summer getaway.

The California-inspired and luxurious The Oak Ranch isn’t the only reason to holiday at Mossy Point, but its a darn good one. Kick back and soak in the sun at his lush resort or cool off with a dip at one of the local swim spots. Situated between the Tomaga River to the north, and Candlagan Creek to the south, Mossy Point is perfect for all things aquatic.

Sitting in Shoalhaven on the South Coast is Jervis Bay. With its crystalline waters paired with bright white sands (most evident at Hyams Beach) this place is certainly easy on the eyes. Throw in a handful of national parks, a lighthouse, and a brewery and you have the makings of a great beachside escape. You’ll want to add Chinamans Beach, Bodoree National Park and Jervis Bay National Park to your ‘must-see’ list.

The pretty seaside town of Vincentia in the Shoalhaven region is best known for its powdery white sands and crystal-clear waters. In fact, Vincentia is home to 6.5 kilometres of beach that stretches from Huskisson in the north to Hyams Beach in the south. For snorkelling, head to Blenheim Beach. And if you want to uncover one of the costal town’s best hidden beaches, head to Orion Beach.

We’ve already mentioned Jervis Bay, but Hyams Beach deserves its own mention. While Hyams Beach is located within the Jervis Bay area, its a destination in and of itself thanks to it sugar-white sand beach, crystal clear waters and national park that sits on the fringe of the seaside village.

Located in the Shoalhaven Region, Mollymook has been a go-to holiday spot for generations. It’s got a bit of everything that makes an Aussie costal town great. Think great surf beaches, impressive regional restaurants and a mix of lush and contemporary seaside accommodations like Bannisters and Motel Molly. Need we say more?

If you want to get back to nature then head to Huskisson. Surrounded by a marine park teeming with wildlife and unspoilt bushland, this South Coast village in the heart of Jervis Bay is rich in natural beauty. Just a 2.5 hour drive from Sydney and Canberra this spot is popular among families looking for a laidback summer holiday.

You’ll find Austinmer just north of Wollongong. The beach suburb is a popular beach destination, especially for those who can’t resist a picture-perfect rock pool. Austinmer is actually home to two of them. It’s only an hour from Sydney so it’s also close enough for sun seekers with only a day or two to spare.

Call yourself a self-respecting New South Welsh-person but haven’t yet travelled to Batemans Bay? We really don’t want to have to ask you to hand in your NSW badge. For those who enjoy snorkelling, this South Coast beachscape is home to the Batemans Bay Snorkelling Trail. Here, visitors can swim over reefs and spy native fish at play. Active holidaymakers can also amble along the area’s splendid walking tracks. Freshly caught local seafood is the order of the day here, and oysters are a non-negotiable. Oyster afficionados can take a tour of Pearly Oyster Bar’s farm on the Clyde River before sampling its produce at the bar. And, for a relaxing and well-dressed stay, book a rest at retro motel, The Isla.

Terrigal on the Central Coast needs no introduction. Its long stretch of golden sand beach, proximity to the city – it’s only a 1.5 hour drive from Sydney – and new dining and accommodation offerings make it the perfect spot for an idyllic and chic weekend away.

If sleepy beach town is what you’re after, Pearl Beach is for you. There are no fancy hotels here. This small beach town on the Central Coast is beloved by locals and regular holiday-makers who relish slow days on the beach and sunset downers at seaside venues like Amalfi Restaurant & Bar.

Based around a point break, Crescent Head on the Macleay Valley Coast, has long been a longboard mecca. But while the surf remains a drawcard, alongside bushwalking trails and 4WD tracks, there are more reasons to visit. Watch out for a growing number of eateries to join Crescent’s much-loved resident bakery, and a slew of newly revamped motels, like Sea Sea.

Tucked into the mid-North Coast, on the edge of the Macleay River is South West Rocks. Outdoors adventure (and plenty of it) awaits here – there’s bushwalking trails to explore, and fishing opportunities galore. Cooling off isn’t a problem either with both beach and creek to choose from. Horseshoe Bay Beach is a sheltered cove fringed by pines, or family favourite Back Creek.
