Peter Gilmore needs little introduction. He’s one of Australia’s most acclaimed and recognisable chefs, and the culinary mastermind behind two of Sydney’s most esteemed restaurants, Quay and Bennelong. While Tasmania has always been a go-to holiday spot for Gilmore and his family, it wasn’t until 2023 that they decided to partially relocate to the island state, purchasing a sprawling 2.8ha property in the Channel region south of Hobart.
