And, it wouldn’t be a Spanish holiday without planning your day around meals. On site are a selection of dining options, to suit your every whim. Spain’s  99 Sushi Bar & Restaurant will open a new outlet at the property, and Spanish two-Michelin-star chef Paco Roncero introduces his new concept restaurant, O by Paco Roncero. Diego Cabrera, named one of the World’s 50 Best Mixologists, will be at the helm of Eddy’s Bar and a beach club will boast a Champagne and oyster bar at the resort. Enough said? Not quite.

Overlooking the Mediterranean, the resort is also home to three gold courses and a large events space (wedding bells, anyone?). The palazzo-style setting has been designed by British architect, Ed Gilbert, and is filled with more than 1,200 original artworks – an eclectic mix of paintings, sculptures and artefacts.
