James Trees may not be a celebrity chef to tourists, but to Las Vegans he’s famous for redefining the Downtown food scene, and now he takes on the Las Vegas Boulevard with High Steaks at Rio. There are probably as many steakhouses as there are neon signs in Vegas, but what sets High Steaks apart from the rest is its wild game offering. Look under the section ‘The Hunt’ on the menu and you’ll find Wild Boar Porchetta, Elk Backstrap and Bison Filet. “Once you have it, you’ll never go back to beef,” says Trees. One of the most impressive dishes under ‘The Hunt’ is the “Lion”, a whole lion’s mane mushroom from Desert Moon Farms Las Vegas, which is cooked and flavoured with the same care as a meat dish.
