The 10 most delicious things you must eat and drink on your next trip to Japan

Let’s begin with an admission: this is not an exhaustive list. There are so, so many amazing things to eat in Japan, both sweet and savoury, that by far the most difficult part of coming up with the following entries was deciding which classic, delicious dishes to leave out. You won’t find okonomiyaki here, or tempura, or mochi, or karaage, or even gyoza – and that’s not because we don’t love them, it’s just that we couldn’t fit them all in. Japan is like that. The whole country is a smorgasbord, where provenance is respected and seasonality is key, and every single day you will be forced to make these very same difficult decisions. What am I going to eat?
