Sydney is in its new hotel era. Earlier this year The Eve Hotel opened its doors to Redfern, just recently The Brighton launched its brand-new look after a multi-year-renovation and now the leafy inner-city suburb of Paddington it’s getting a new addition. Cue: 25hours Hotel The Olympia.

Bringing a new life to the heritage-listed site of the former West Olympia Theatre and the legendary Grand Pacific Blue Room on Oxford Street, the new 25hours marks the debut of the hotel brand in Australia. The 109-guest-room property draws inspiration from the building’s cinematic past, but the real drawcard of the hotel is the collection of four food and drink venues: The Palomar, Monica, The Mulwray and Jacob the Angel.

Monica is a chic rooftop bar that boasts views of Paddington and Sydney’s skyline and is the perfect spot for sundowners. The cocktail list features the hotel’s signature Monica’s Daiquiri – a tropical mix of Bacardi, Carta Blanca, HUSK Coconut, Brookie’s MAC, mango, lime, macadamia orgreat – that is basically summer in a glass. The bar is open to the public and the menu is perfect for sharing for a pre-dinner snack. For a night cap The Mulwray is an intimate bar that embraces biodynamic wines and classic drinks.

For breakfast, guests won’t have to venture into the CBD or to Rosebery for a Lune croissant. At Jacob the Angel, on the ground floor, guests or the public can grab a Lune pastry to go or settle in for something heartier like Jacob’s Breakfast, which consists of LP’s mortadella, bresaola, manchego, smoked cheddar, hummus, pickles, soft boiled eggs, and PiOik flatbread.

The jewel in 25Hours crown is The Palomar. The 25hours team will be bringing one of London’s most celebrated restaurants to Sydney. Iconic flavours of Southern Europe, North Africa and the Levant come together to create The Palomar’s unique menu. The 110-seat restaurant will reside in the former Grand Pacific Blue Room, but no traces of the 1994 nightclub aesthetic remain. Instead, The Palomar’s timeless design in London has made its way over the Indian Ocean to Sydney. Design elements such as a pink quartzite bar top, rich navy leathers timber flooring, and marble mosaic tile inlays pay tribute to The Palomar London’s aesthetic.

The Palomar’s menu also takes cues from its London predecessor when it comes to the menu, but with an Aussie twist. The team works closely with local farmers, fishermen, and oyster growers – including Sydney Rock oysters from Appellation Oysters and Wheeler’s, organic vegetables from Newcastle Greens and Sift Produce, line-caught fish and sustainable seafood from Blue Reef and SouEast Seafoods, retired dairy cows and Berkshire pork from Copper Tree Farms, and bread from local organic baker Pioik, ensuring the menu evolves with the seasons and showcases ingredients at their peak.

Current menu highlights include cucumbers with green tahini and crispy chilli oil, Berkshire pork chop with roasted grapes and sherry, butterflied blue mackerel with chermoula, grilled southern calamari with preserved lemon, and a pistachio ice cream baklava sandwich. We’re drooling just thinking about them.
