Emirates One&Only Wolgan Valley will soon be welcoming an exciting new addition: Executive Chef, James Viles.
The ultra-luxe resort nestled on 7,000 acres in the New South Wales Blue Mountains is well-known for its commitment to sustainability and exquisite regionally sourced food, an ethos which is shared by their new Executive Chef.
The acclaimed restauranteur behind award-winning Biota Dining in the New South Wales Southern Highlands is a natural choice to helm the resort’s dining experiences. Viles is renowned for his creative take on modern dining, and his passion for locally sourced, seasonal produce.

The appointment promises a whole host of exciting new menus and foodie adventures for the world-leading carbon neutral resort, which has become one of Australia’s most sought-after gourmet getaways.
