Live like a millionaire for a day with Sydney's latest dining experience

Harbourside dining has just been redefined.

A lavish life like Mariah Carey’s isn’t something that most of us can relate to. Most of the time anyway, but now there is a way to live just like Mariah and her millionaire friends for the day in Sydney.

Sydney Harbour has just become the new home of superyacht Infinity Pacific. The showstopping boat landed in November and is the only Italian-built alloy superyacht available for charter in Sydney. Owned by the Pacific Hotel Group, the boat isn’t just for sailing, or sleeping, but intended to be embraced for eating too. It is currently available for $3500 an hour, with a given adventure four hours minimum.

There is both an informal and a formal dining option on the 40m vessel, which contains three levels of living space and was designed by Parisian interior architect Fréderic Méchiche and Luca Dini. There’s also outdoor dining available on the upper deck, with a Japanese-style soaker tub and bar that accompanies – providing the perfect location for a pre- or post- dinner Champagne.

The boat can be chartered for the day, or the week, or however long you can afford it. And, for an extra fee, that can include the presence of Noosa Beach House’s executive chef Peter Kuruvita. While Peter has designed the current menu on offer aboard the vessel – with a focus on seafood and Sri Lankan-inspired dishes – you can organise to have Peter physically on board cooking for you, your friends and family if you desire. He’ll be serving up dishes such as his famed Sri Lankan snapper curry and seared yellow fin tuna with ruby grapefruit, sweet pork and crackling.

Following lunch or dinner, you can choose to sleep off your feasting in one of the boat’s many bedrooms – there’s a master suite, as well as two double cabins which span the vessel’s full width. Two additional twin cabins complete the guest accommodation. You can also choose to remain within the borders of the harbour, or adventure off further afield with cruising potential along the length of the Australian coast, as far as the Whitsundays or even New Zealand.

Greg Karedis, co-founder and owner of the Pacific Hotel Group says that there has long been demand for such a luxe offering. “Sydney and Australia continue to receive strong demand from the luxury holiday market and Infinity Pacific will present further opportunity to local and international guests looking to enjoy an unrivalled experience,” he says.
