Adam D'Sylva will head up hotly anticipated W Melbourne restaurant Lollo

W Melbourne have finally revealed the local chef that will helm signature restaurant Lollo when the hotel opens its doors in early 2021.

Tonka and Coda owner and chef Adam D’Sylva –– formerly of Longrain Melbourne, and Pearl  – will take on the coveted position at the helm of W Melbourne’s hotly anticipated new eatery, Lollo.

The long-awaited announcement has been one of the restaurant industry’s most keenly debated topics since W Hotels revealed that they’d be coming to the world’s most livable city earlier in the year. 

The restaurant promises a menu positively overflowing with remixed classics and bold new innovations, with ingredients sourced from Melbourne’s surrounds to form the focus.

The 110-seat restaurant looks set to become a firm favourite for long lunches, with the D’Sylva-driven menu expected to offer plenty of sharp, fragrant flavours, ideal for sharing.

Equally as exciting is the vibrant drinks list that will be on offer, which will showcase a slew of Victoria’s best breweries and wineries, as well as vibrant cocktail creations that promise to “play on the unexpected.”

Around 70% of the wine list on offer will be local, with almost half of that coming from makers in Victoria. Bubbly drinkers and those looking to celebrate won’t be left out, with a large selection of prestige Champagnes available by the glass, alongside classic varietals and a few quirky options.

D’Sylva will work with Executive Chef Jihun Kim to create a menu that combines familiar elements with touches of the unexpected in a bid to bring the spotlight to local, seasonal produce.

Prior to joining Pearl and Longrain Melbourne, D’Silva completed his apprenticeship in Melbourne, then travelled extensively throughout Europe and Asia, working alongside some of the finest chefs at restaurants in the Marche region of Italy and Hong Kong.

Kim will also oversee all of W Melbourne’s food and beverage offering, including Curious, Japanese restaurant Warabi and wine bar-café hybrid, Culprit
