Pavlova in a bottle? The Dolphin drops an epic Christmas cocktail range

Have your cake, and drink it, too.

It just wouldn’t be Christmas without a pav or a pud, and now you don’t have to wait until Christmas Day to indulge. Instead, you can enjoy your favourite festive desserts in liquid form, with new bottled cocktails from Sydney’s The Dolphin Hotel. 

Joshua Reynolds, drinks director for The Point hotel group, has raided his mum’s recipe book to come up with the range of bespoke cocktails, which includes Pavlova Punch and Christmas Pudding Old Fashioned, as well as Carrot Cake Negroni and Dairy Milk Choc Negroni. 

“The concept behind these four bottled cocktails was to take the drinker to a place they’ve never been before,” Reynolds says. “Just think – drinking liquid pavlova, Christmas pudding, carrot cake or chocolate, all laced with delicious, top-shelf spirits that really speak to the idea of what the cocktail actually is.”

This is so much more than just flavoured water mixed with alcohol – Reynolds has gone to painstaking effort to create some truly inspired libations. Pavlova Punch features meringue-washed pisco clarified drip by drip through fine mesh; Dairy Milk Choc Negroni features four different types of chocolate; while Carrot Cake Negroni is made by infusing a classic negroni recipe with real carrot cake for 72 hours. 

After all that effort, these drinkable desserts deserve to be sipped slow, in the company of your favourite people. We’ll be over after work.
