The science of the sip: why McDonald’s Diet Coke hits different

Those DC runs to the Macca’s drive-thru are now totally vindicated.

Whatever bad things you might have to say about McDonald’s, you’d have to admit they do a pretty mean Diet Coke. Even people who don’t like McDonald’s like McDonald’s Diet Coke. It’s just one of those weird facts of life that everyone walks around kind of knowing, without ever really feeling the need to talk about. Until someone starts talking about it. 

Enter Hilary Duff, who is famous for reasons that I’ve managed to live this long without caring to learn. I did google ‘Why is Hilary Duff famous?’, but then I got bored and decided to go and do my tax return instead. 

Duff is currently on a press tour to promote her upcoming album, and as part of this, made an appearance on the YouTube series Mythical Kitchen’s Last Meals. During the show, in which she and host Josh Scherer chowed down on various things that would make up the singer’s last meal – including a McDonald’s Diet Coke – Duff said that the reason the chain’s DC tasted better than anywhere else was because “Diet Coke has a lifelong contract with McDonald’s” and the Golden Arches receives their DC “premixed and delivered by truck”, when all other fast-food franchises get cartridges of syrup that have to be mixed on site. 

Of course, this set off the inevitable ‘McDonald’s Diet Coke is the best’ discussion in the delicious. office, which mostly consisted of everyone nodding with the solemn reverence usually reserved for fine wine.

Does McDonald’s have a contract with Coke?

It turns out that Duff is not completely off track about the truck. McDonald’s does indeed have a special deal that usually sees their Coke delivered by truck, but it’s not already mixed. That would be rather messy. Instead, it’s the syrup that is delivered, in special stainless-steel trucks. Other fast-food chains receive their soft-drink syrups in plastic ‘bag-in-box’ containers.

The stainless steel trucks are designed to protect the syrup and keep it fresher. When it arrives, it’s then pumped straight from the truck into the restaurant. But this is not the only secret to the beverage’s superior taste.

The McDonald’s Diet Coke recipe

All McDonald’s restaurants use high-end water filtration systems, to remove any contaminants or impurities – basically anything that could affect the taste of the end product. This not only ensures a superior soft drink; it also ensures that all  McDonald’s soft drinks taste the same across all restaurants. Both the filtered water and the syrup are also pre-chilled to ensure that the final mixed product is nice and icy cold when it comes out of the soda machine. 

Finally, Macca’s also uses a higher syrup-to-water ratio than other fast-food chains, which is why your McDonald’s Diet Coke never tastes weak and watery, even once the ice melts.

The secret’s in the straw

But that’s not all. As Scherer pointed out to Duff in their interview, the size of the McDonald’s straw also has something to do with the whole ‘superior’ drinking experience. The straws at McDonald’s are around 20 percent wider than your average straw. This allows for more liquid to flood your mouth (and your tastebuds) at once, allowing for a bigger flavour/refreshment hit, which gives the reward centres of your brain more of a boost, and you a big dopamine buzz. 

But McDonald’s Australia doesn’t sell Diet Coke!

Yes, McDonald’s Australia stopped selling Diet Coke at the beginning of 2023. Instead, they offer Coca-Cola No Sugar. But everyone still calls it Diet Coke. And frankly, as long as it’s tall, icy and delivered through a giant straw, we really couldn’t give a sip.
