Bird in Hand has released its first Tasmanian sparkling, a crisp and elegant pinot noir and chardonnay blend crafted from a single vineyard in the Tamar Valley.

Bird in Hand has popped the cork on a new chapter with the release of its inaugural Tasmanian sparkling, a vibrant expression of cool climate precision and island-grown character.

Made from a 50/50 blend of pinot noir and chardonnay, the 2025 sparkling comes from the winery’s Tamar Valley vineyard in northern Tasmania. It is bright, crisp and mineral driven, with notes of red apple skin, citrus blossom and lemon zest, and a refined, refreshing finish that speaks directly to the region’s maritime influence.

“Tasmania offers the ideal conditions for sparkling wine,” says Bird in Hand Senior Winemaker Sarah Burvill.

“Pristine fruit, natural acidity and incredible site expression. The 2025 sparkling captures all of those characteristics. It is vibrant and precise, and layered with finesse. We aimed for a style that is bright and fresh, and perfectly celebratory.”

This sparkling joins Bird in Hand’s Tasmanian Series, which launched earlier this year with a reserve pinot noir, a nouveau style pinot and a pristine riesling. Like its siblings, the sparkling showcases Tasmania’s growing reputation for finesse and natural acidity, but with its own celebratory twist.

Presented with a clean and contemporary finish, without the traditional sparkling hood, the bottle feels modern while remaining grounded in craft. With a run of around 1,600 dozen and a recommended retail price of $30, this is a Tasmanian sparkling that overdelivers.

The release also coincides with Bird in Hand’s expanding footprint in Tasmania, including a new tasting room and restaurant set to open at the Royal Tasmanian Botanical Gardens in Hobart later this year.
