Just in: Anna Polyviou to open a new patisserie in the old Cornersmith location

Acclaimed pastry chef Anna Polyviou will open her first-ever venue, confirming she will be setting up shop in the old Cornersmith building, located in Marrickville.

Since late last year, Anna has been testing out her new menu at Textbook Patisserie in Alexandria.

Every Saturday, Anna launches a new limited edition pastry for locals to try and the response has been overwhelming.

“We did the Fairy Bread, which went crazy and we sold out in half an hour after the doors opened,” Anna Polyviou said.

The Fairy Bread-inspired croissant, which is set to be a mainstay of the menu, is made from a pink and white striped butter croissant filled with vanilla crème patissiere and raspberry compote, topped with chantilly cream, fairy bread, white chocolate and hundreds & thousands.

She’s also tried out a Biscoff and lamington croissant, as well as a savoury spinach and cheese version.

Anna Polyviou’s new Marrickville-based patisserie will pump out fresh croissants and bakery treats every morning, as well as a range of spectacular celebration cakes for takeaway.

“I also want to have a bit of a Greek twist in there as well. I want to be doing my spanakopita, I want to have some of mum’s haloumi cheese, too,” Anna said.

Many of Anna’s new pastry creations were inspired by fans, who frequently DM her suggestions and requests on Instagram. “That’s what’s going to keep my shop alive. I’m listening to what people want and delivering that,” she said.

“I think what lockdown has made me realise is that we do need people around us. We do need our customers and we need to listen to what they want.”

The yet-unnamed patisserie is set to open early this year within the old Cornersmith building located in Marrickville.
