A futuristic new cake shop is coming to Swanston Street this month, with the opening of Miilk Cake Studio, a dessert station by Melbourne baker, Tia Tan. Inspired by her own family recipes, the Singaporean-style cake shop is part science fiction, part kitschy birthday party.

Tan comes from a long line of bakers, starting with a family-owned bread shop founded in 1950 in Bukit Timah, a small regional village in Singapore. And while her recipes might pay homage to traditional Asian flavours like ube and pandan, the cake lab is anything but old fashioned.

Layered in silver chrome, Tiffany blue and sharp white neons, the sleek studio is a stark contrast to the frilly frosted layer cakes being whipped up in the kitchen. With 21 slices and full cakes to choose from, the fluffy sponges are spiked with signature South East Asian flavours like the triple hojicha made with toasted Japanese tea, the tropical paradise cake with mango and pandan and pops of mango jelly, or the milo dino coffee sponge with layers of whipped milo cream.

To celebrate the grand opening of Melbourne’s latest cake shop, Tan and her team will be slinging free slices of cake all day when the doors open on July 29, and who could say no to that?
