Meet the new Strawberry Watermelon Cake.
Christopher Thé, aka the creator of the world-famous Strawberry Watermelon Cake, is back with a new cake shop and cafe stocked with a dazzling array of new pastry creations.
Head to Hearthe in Stanmore to taste his new range of cakes, croissants, pies and tarts, which take their inspiration from fresh, seasonal produce and native Australian ingredients.

Some of the most covetable confections include a Geraldton Wax Cheesecake made from goats curd with a ring of Geraldton wax jelly bubbles on the top as well as a choc caramel-inspired Paperbark Cake, layered with paperbark dacquoise, smoked chocolate ganache and eucalypt caramel.
Seven Season‘s award-winning Green Ant Gin will make a special appearance in a Hibiscus Cake, which features a gin-soaked basil sponge topped with raspberry gel and hibiscus marshmallow.

The viennoiserie selection goes beyond the buttery basics to include a boozy almond and rum croissant and a cinnamon spice stick – an original creation made from caramelised croissant dough sprinkled in cinnamon myrtle sugar. For afternoon tea, there’s saltbush scones made CWA-style with white peach jam and wattleseed cream.
And that’s just the sweet items. From the savoury side of the menu, you’ll find homemade pies and quiches, as well as substantial meals for a sit-down lunch. Settle in with akoya oysters Kilpatrick, then follow up with kangaroo wellington or fried yam hash with warrigal greens.

Beyond the espresso (which will be supplied by local roaster The Little Marionette), you’ll also be able to order cocktails, wine and beer, alongside specialty teas, juices and milkshakes.
Coffee cups and soft plastics will be recycled, with plans to make the cafe completely waste-free in time. “Our ultimate goal is to become a 100% carbon-neutral business which we are committed to achieving in due course through small incremental steps,” Thé said.
