The most faithfully worshipped pop-up of 2020 is back in brick, baby. Cue the queues.
When chef Ben Williamson and the restaurant legacy-building team behind Bianca, Honto and Same Same boldly set forth to open Agnes in 2020 and hit a small roadblock known as Covid 19. While faced with delays and temporary lockdown measures, the team devised and pulled off one incredibly successful pop-up iteration of their pyro-centric restaurant.
Agnes Bakery proved the people of Brisbane had an insatiable appetite for wood-fired pastries and breads, and the pop-up lured people out of bed and into the streets of Fortitude Valley – happily lining up for lengthy waits to get a taste of the action. In fact, the lines were so long they made local TV news headlines.
Now that Agnes Restaurant (and the team’s subsequent restaurant, Bianca) are not only thriving but booking out months in advance, the pleas of the people have been answered and Agnes Bakery is returning. This time, it’s back for good.

Set to open between the end of August and beginning of September, this purveyor of baked goods will sit on the corner of Harcourt and James Streets in New Farm (in case anyone wants to pitch their tents in anticipation). Expect the likes of freshly baked breads, kouign amman, doughnuts filled with housemade jams and a bevy of surprises in store. Save us a spot?
