This restaurant is taking pop-ups to new heights.
Climbing Everest isn’t for the faint of heart, there’s the dizzying height to deal with, not to mention the lack of oxygen and crippling temperatures. And that’s if everything goes right, which as we know all too often it doesn’t.
So, it’s not every day that you hear about a group of chefs hitting the slopes hoping to set a world record for the world’s highest pop-up restaurant, serving a seven-course fine dining dinner more than 11,600 feet above sea level. But that’s exactly what four chefs and ten diners hope to achieve when they hit Everest Base Camp later this month.
It’s not the first time though that something of this magnitude has been attempted. Back in 2016 ex-Noma chef James Sharman successfully set up his own pop-up restaurant, but the meal was never officially recognised by the Guinness World Records. In this attempt, the four chefs and ten diners will leave Lukla in Nepal for an eight-day trek, foraging for ingredients as they go along the route to Everest Base Camp.
“Flavour [perception] will be decreased, so we will be designing a menu of extraordinary dishes accordingly, where spices will have the upper hand,” Sanjay Thakur, an Indian chef who is one of the four travelling in the group, told Fine Dining Lovers. “The biggest challenge of course will be the altitude, which will affect everything.”
When it comes to just how they’ll actually cook most of the food, the group plan to sous vide most of the dishes, and everything from the furniture to the dining area itself has been designed to ensure no trace will be left at the campsite.
All the money raised from the expedition will also go to local charities, and for those with a spirit of adventure, tickets are currently being sold for US$5,600 which includes all flights, accommodation and, of course, the dinner. And if trekking through snow and blizzards isn’t your kind of holiday, there’s the option to travel some (or all) of the way via helicopter.
And yes, wine is included.
