There's a new kid on the butcher's block.
Exciting news for Sydney’s northern suburbs with the opening of Vic’s in Chatswood. Vic’s is the little sister of Woollahra’s Victor Churchill and the generational legacy of Anthony Puharich and his family.
Dubbed by Anthony Bourdain as “the world’s most beautiful butcher” Victor Churchill has been supplying high quality meat that’s (almost) too pretty to eat since 1996. The original has spawned a series of offshoots by way of a Victor Churchill in Armadale, and Vic’s – previously Vic’s Meats.
The flagship store at Sydney Fish Markets was the first, and now Chatswood Chase has scored its very own.

Along with the Chatswood expansion, 2024 will bring Vic’s to more corners of the city including another store in Bondi Junction and a Chadstone, Melbourne store to follow.
Vic’s Chatswood Chase is sticking to the conventional butcher model, with stunning sausages, trussed roasts, and beautifully butchered cuts of beef, chicken, pork, and lamb. While there will not be a food service element in Chatswood, there will be plenty of ready-made staples like wagyu lasagne, VicNuggets, wagyu cheeseburger spring rolls, burger kits, parmigiana kits and brisket kits.
