Smashed avo just got a serious glow up.

The first hints of spring are in the air and naturally we’re panicking as we seek out high-protein, healthy snacks that will transform us into our Best Summer Selves. 

Nutritionist and author Madeleine Shaw has taken the viral cottage cheese wrap that flooded our feeds last year and given it a lean, green makeover with just three ingredients. Shaw is getting her glow on by whisking an egg, mashing an avocado and sprinkling a handful of cheese together to create a tasty low-carb snack.

The wellness blogger pairs the three-ingredient wrap, with hummus, smoked salmon and rocket and to be honest, that sounds like the sort of brunch that will leave you feeling very smug indeed.

Here’s how to make avocado flatbreads

Ingredients

  • 1 large egg
  • ½ cup of grated cheddar
  • 1 large, ripe avocado

Method

  1. Preheat your oven to 180 degrees celsius
  2. In a bowl, mash your avocado until fully smooth before adding the egg and cheese. Stir until well combined.
  3. Line a baking sheet with foil and lightly oil the surface. Spoon your avocado mixture into two flat circles then bake for 20 minutes. Allow to cool and serve with your toppings of choice.
