Want to eat like an athlete? Here's what's on the menu at the Olympic Village

As the world’s elite athletes gear up for the ultimate showdown of skill, endurance, and sportsmanship at the Paris 2024 Olympics, there’s another challenge brewing in the Olympic Village: how to supply as many as 60,000 meals per day for the most important athletes on the planet, while setting the bar for environmentally conscious dining to protect the planet. Fortunately, a team of Michelin-starred chefs are up for the challenge.

Chef-owner of Parisian restaurant ‘La Pouliche’, and executive chef at the Rosewood in London, Amandine Chaignot has created a very fancy dish for the Village, which she showcased during a conference in 2023. “What I cooked here is poultry, guinea fowl slowly roasted with a nice crayfish jus, very reduced, very intense, with a ‘poulette’ sauce, so it’s a kind of creamy, comfort food.”

Chef Alexandre Mazzia of three-Michelin starred ‘AM par Alexandre Mazzia’ in Marseille has also crafted dishes for the athletes during the sailing and soccer events, which will be hosted by Marseille. Crushed chickpeas with herbs and a smoked fish sauce; chocolate mousse with fresh raspberries and a health conscious quinoa risotto are all expected to feature.

Back at the Paris Village, an on-site boulangerie will be dishing out freshly baked bread, because of course, and while we love to imagine the athletes unwinding over a glass of vino after a race, there is a strict no-alcohol policy in place.

At the Athlete’s Village restaurant, Sodexo Live, athletes will be able to access 40 different meals each day, designed around four cuisines; French, Asian, Africa-Caribbean, and World cuisine.

French vegetable bourguignon and Brandade de morue (salt cod and potato mash), as well as Asian minced pork with Thai basil and basmati rice, and turmeric spiced cauliflower and baked potato are all on the menu, and honestly we can think of worse ways to carbo load.

Of course, the Australians will also be enjoying non-stop flat whites thanks to a crack team of baristas flying in just for the occasion.

Central to the Paris 2024 food mission is a commitment to sustainability. The food program is designed around the principles of reducing waste, sourcing ethically, and highlighting organic and locally produced ingredients. Food curators are aiming for 100 percent certified food, with 80 percent of French origin products, 25 percent from within 250km of the venues, and 30 percent organic products. Any produce that cannot be sourced from within France will be organic and fair-trade certified.

100 percent of uneaten food will be recycled, and all infrastructure of the Olympic Village has a second-life guarantee – meaning the newly constructed city will be converted into housing and workspaces for up to 12,000 people, two schools, communal green spaces and more.

The message of the Paris 2024 games is clear: the road to a greener future is paved with Olympic gold.
