Ingredients (8)

  • 100g fig paste
  • 25g runny honey
  • 5g salt flakes
  • 3 cups (750ml) fresh light red wine (we used pinot noir)
  • 100ml apricot brandy liqueur (optional)
  • Grapes, to serve
  • Cheese, to serve
  • Crackers, to serve

Method

  • 1.
    Place fig paste, honey, salt and 1.5L hot water in a large saucepan. Bring to a simmer, then reduce heat to low and cook, stirring occasionally, for 15 minutes until fig paste has dissolved. Strain and refrigerate for at least 2 hours to cool completely.
  • 2.
    Combine fig mixture with the wine and apricot brandy (if using) in a jug and chill until ready to serve.
  • 3.
    Serve punch alongside a plate of fresh grapes, cheese and crackers.
