A delicious vegan porridge recipe for those chilly winter mornings.

Ingredients (5)

  • 100g quick oats
  • 1 1/3 cups (330ml) store-bought almond milk
  • 1 banana, thinly sliced
  • 1 1/2 tbs panella (unrefined whole cane sugar – from health food shops, substitute brown sugar)
  • Chopped almonds, to serve

Method

  • 1.
    To make the porridge, combine oats, milk and 2 tbs water in a microwave-safe bowl. Microwave on high, stirring halfway, for 90 seconds or until oats are softened. Transfer to a serving bowl and stand for 5 minutes to thicken slightly.
  • 2.
    Meanwhile, to make the banana topping, heat a frypan over high heat. Add banana, panella and 2 tbs water, and cook, stirring occasionally, for 3 minutes or until banana is golden. Top porridge with banana mixture and scatter with chopped almonds to serve.
