Apple, chai and ricotta muffins with apple dukkah
These muffins hum with the addition of chai spices and dried apple and are great for lunch boxes or morning or afternoon tea.

Ingredients (15)

  • 2 cups (300g) self-raising flour, sifted
  • 150g caster sugar
  • 1 tsp ground cinnamon
  • 1/2 tsp each ground ginger, ground cloves and ground cardamom
  • 1 egg
  • 150ml buttermilk
  • 1/4 cup (60ml) sunflower oil
  • 1/2 cup (30g) dried apple, finely chopped
  • 1 tsp vanilla extract
  • 2 cups (480g) fresh ricotta
  • 1/3 cup (80ml) runny honey

Apple dukkah

  • 1 cup (60g) dried apple, finely chopped
  • 2 tbs toasted white sesame seeds
  • 2 tbs roughly chopped toasted cashews
  • 1/2 tsp ground cinnamon

Method

  • 1.
    Preheat oven to 200°C. Grease a 12-hole, 1/3-cup capacity muffin pan.
  • 2.
    Place flour, sugar, spices and a pinch of salt in a bowl. Combine egg, buttermilk, oil and apple in a separate bowl, then combine with dry ingredients. Fold in vanilla and 1/2 cup (120g) ricotta.

    Spoon into pan and bake for 20 minutes or until a skewer inserted in a muffin comes out clean. Cool.
  • 4.
    Place remaining 1 1/2 cups (360g) ricotta in a bowl. Add honey and whisk until smooth. Spread over cooled muffins.
  • 5.
    Toss together dukkah ingredients and scatter over muffins to serve.
