Ingredients (8)

  • 3 cups (750ml) cloudy apple juice
  • 8 kaffir lime leaves, bruised
  • 4 green apples
  • 2 kaffir limes or regular limes
  • 2 tbs caster sugar
  • 3 cups (750ml) white moscato
  • 2/3 cup (165ml) triple sec liqueur
  • Ice cubes, to serve

Method

  • 1.
    Place apple juice and kaffir lime leaves in a pan over medium heat. Bring to the boil, then remove from heat and set aside for 1 hour to infuse. Strain and set aside to cool completely.

    Divide mixture among 6 x 1/2 cup (125ml) popsicle moulds. Thinly slice 1 apple and place 1 slice in each mould. Cover moulds tightly with foil and insert a popsicle stick into the middle of each mould. Freeze overnight.

    Finely zest the limes, then combine zest and sugar in a bowl. Halve limes and run around the rims of 6 glasses. Dip each glass into the lime sugar mixture. Divide moscato, triple sec, and remaining lime juice among glasses.
  • 4.
    Slice the remaining 3 apples. Serve popsicles in a bowl layered with apple slices and ice. Dip popsicles into the moscato cocktails to serve.
