Apple and lime popsicles with moscato and triple sec
These boozy popsicles are trending this summer. Show off you're ahead of the drinks game and freeze your cocktail.
Ingredients (8)
- 3 cups (750ml) cloudy apple juice
- 8 kaffir lime leaves, bruised
- 4 green apples
- 2 kaffir limes or regular limes
- 2 tbs caster sugar
- 3 cups (750ml) white moscato
- 2/3 cup (165ml) triple sec liqueur
- Ice cubes, to serve

1.Place apple juice and kaffir lime leaves in a pan over medium heat. Bring to the boil, then remove from heat and set aside for 1 hour to infuse. Strain and set aside to cool completely.

2.Divide mixture among 6 x 1/2 cup (125ml) popsicle moulds. Thinly slice 1 apple and place 1 slice in each mould. Cover moulds tightly with foil and insert a popsicle stick into the middle of each mould. Freeze overnight.

3.Finely zest the limes, then combine zest and sugar in a bowl. Halve limes and run around the rims of 6 glasses. Dip each glass into the lime sugar mixture. Divide moscato, triple sec, and remaining lime juice among glasses.

4.Slice the remaining 3 apples. Serve popsicles in a bowl layered with apple slices and ice. Dip popsicles into the moscato cocktails to serve.
