Ingredients (8)

  • 1 cup (150g) plain flour
  • 75g chilled unsalted butter, chopped
  • 1/4 cup (60g) brown sugar
  • 50g pecans, finely chopped
  • 1/2 tsp ground cinnamon
  • 750g small Granny Smith apples, peeled, halved lengthways, cored (see note).
  • 1/4 cup (60ml) maple syrup, plus extra to drizzle
  • Creme fraiche, to serve

Method

  • 1.
    Preheat oven to 200°C/180°C fan-forced.
  • 2.
    Place flour, butter and a generous pinch of salt flakes in a large bowl. Using fingers, rub butter into flour. Add sugar, pecans and cinnamon and stir to combine.
  • 3.
    Place apple and maple syrup in a 28cm baking dish and toss to combine. Crumble over the flour mixture, scrunching with your fingertips to make 1-2cm rough clusters. Bake for 50 minutes or until golden and bubbly.
  • 4.
    Stand for 10 minutes before serving with a dollop of creme fraiche and an extra drizzle of maple syrup.

Recipe Notes

You’ll need a 28cm round baking dish.

We used lunchbox-sized apples found in packets in supermarkets. You can use any sized apple; larger ones should be chopped into 2-3cm pieces.
