Being the Cali boy that I am, I add an American twist to my lumpia (Filipino spring rolls), and whats more American than a bacon cheeseburger? Instead of filling these fried rolls with pork and vegies, theyre stuffed with all the great elements of an American burger: ground beef, bacon and cheddar. – Snoop Dogg

Ingredients (8)

  • 2 tbs extra virgin olive oil
  • 1 cup (140g) diced onions
  • 5 garlic cloves, minced
  • 450g beef mince
  • 1 cup (180 g) maple-cured bacon, cubed
  • 2 cups (160 g) finely grated sharp cheddar cheese
  • Rice paper wrappers
  • Vegetable oil, for frying

Method

  • 1.
    In a large frypan over medium heat, warm the oil. Cook the onions and garlic until tender, about 8 minutes. Add the beef and bacon and cook until browned. Add the cheese, stirring to combine. Remove the pan from the heat and add 2 tsp freshly ground black pepper and 1 tsp salt flakes, or to taste.

    Have a small bowl of water ready. Line a baking tray with paper towels and set aside.

    Carefully separate the wrappers. To prevent them from drying out, cover with a moist paper towel. Lay one wrapper on a clean work surface and place 2 to 3 tbs of filling near the edge closest to you. Roll the edge toward the middle, then fold in both sides and continue rolling. Moisten the opposite edge of the wrapper with water to seal. Repeat with the remaining filling and wrappers.

    In a large casserole over medium heat, warm about 2.5 cm of vegetable oil to 180°C (a cube of bread will turn golden in 60 seconds when the oil is hot enough). Add the lumpia and fry until golden brown, 3 to 5 minutes, flipping once. When done, use a slotted spoon to transfer the lumpia to the paper towel-lined baking tray to drain. Serve immediately.
