Bacon mac ’n’ cheese waffle jaffles with hot sauce

Ingredients (12)
- 1tbs extra virgin olive oil
- 3 rashers streaky bacon, chopped
- 1 garlic clove, crushed
- 1tbs plain flour
- 225ml milk
- 100g mozzarella, grated
- 50g parmesan, grated
- 75g tasty cheese, grated
- 100g macaroni, cooked to packet instructions
- 4 slices white bread
- 2 eggs
- Hot sauce, to serve

1.Place oil and bacon in a cold frypan over medium heat. When the fat starts to render and bacon sizzle, cook for 3-4 minutes until crisp then remove bacon and reserve fat in the pan.

2.Add the garlic and cook for 30 seconds then add the flour and stir.

3.Gradually add 125ml milk then stir until smooth. Add the cheeses and stir until smooth.

4.Add the macaroni and bacon. Season and stir to combine, then set aside.

5.Combine the eggs and remaining 100ml milk and whisk to combine. Dredge the bread in the egg mixture then place on a tray.

6.Add some mac and cheese to the centre of two pieces of bread then top with the remaining two slices to make two sandwiches.

7.Press the sides closed. Grease and heat a waffle or jaffle maker and add the sandwiches.

8.Press closed and cook until golden and crisp. Serve with hot sauce, a romantic comedy and a bottle of pinot noir.
