Bacon mac ’n’ cheese waffle jaffles with hot sauce

Ingredients (12)

  • 1tbs extra virgin olive oil
  • 3 rashers streaky bacon, chopped
  • 1 garlic clove, crushed
  • 1tbs plain flour
  • 225ml milk
  • 100g mozzarella, grated
  • 50g parmesan, grated
  • 75g tasty cheese, grated
  • 100g macaroni, cooked to packet instructions
  • 4 slices white bread
  • 2 eggs
  • Hot sauce, to serve

Method

  • 1.
    Place oil and bacon in a cold frypan over medium heat. When the fat starts to render and bacon sizzle, cook for 3-4 minutes until crisp then remove bacon and reserve fat in the pan.
  • 2.
    Add the garlic and cook for 30 seconds then add the flour and stir.
  • 3.
    Gradually add 125ml milk then stir until smooth. Add the cheeses and stir until smooth.
  • 4.
    Add the macaroni and bacon. Season and stir to combine, then set aside.
  • 5.
    Combine the eggs and remaining 100ml milk and whisk to combine. Dredge the bread in the egg mixture then place on a tray.
  • 6.
    Add some mac and cheese to the centre of two pieces of bread then top with the remaining two slices to make two sandwiches.
  • 7.
    Press the sides closed. Grease and heat a waffle or jaffle maker and add the sandwiches.
  • 8.
    Press closed and cook until golden and crisp. Serve with hot sauce, a romantic comedy and a bottle of pinot noir.
