This retro, bite-sized starter combines sweet, salty and savoury in the most beautiful way.
Ingredients (6)
- 50g manchego cheese, cut into 24 small batons, plus extra if needed
- 24 pitted prunes
- 2 rosemary sprigs, leaves picked, finely chopped
- 12 (240g) rashers streaky bacon, halved
- 1/3 cup (80ml) sherry vinegar
- 2 tbs brown sugar

1.Carefully push the cheese into the hole left in the prunes from the pit. Sprinkle the rosemary over the bacon and wrap around each prune to enclose. Place in a small high-sided baking tray lined with baking paper and refrigerate until ready to cook.

2.Preheat the oven to 200°C. Roast the prunes for 15 minutes or until the bacon is starting to brown.

3.Meanwhile, place the vinegar and sugar in a small saucepan over high heat and stir until the sugar dissolves. Bring to the boil and cook for 2 minutes. Pour mixture over the prunes and roast for a further 10 minutes, then turn and baste. Roast for a further 5 minutes or until sticky and golden. Serve immediately.
