Ingredients (5)

  • 1 1/4 cups (250g) dried cannellini beans
  • 1 garlic bulb, halved into two rounds
  • 1 bunch sage, leaves picked
  • 1 vine-ripened tomato (with vine attached)
  • 1/2 cup (125ml) olive oil, plus extra to drizzle

Method

    Soak beans in cold water overnight. The next day, preheat the oven to 200°C or a woodfired oven to 400°C. Drain the beans and place in a baking dish with the garlic, sage, tomato and oil. Add enough water to cover the beans, then cover the dish with foil. Cut a small hole in the centre of the foil to allow steam to escape.

    Bake in the oven for 1 hour 30 minutes (or in the centre of the woodfired oven for 45 minutes) until the liquid has evaporated and the beans are tender. Season, then drizzle with a little extra olive oil. Allow to cool, then serve.
