Baked green tea custards
These cute little custards have the unmistakable taste of green tea. Serve with a single fresh fruit, such as mango, on the side.

Ingredients (5)

  • 400ml milk
  • 2 tablespoons caster sugar
  • 2 teaspoons green tea powder (matcha)
  • 4 eggs
  • Sliced mango or other fruit, to serve

Method

  • 1.
    Preheat the oven to 160°C.
  • 2.
    Gently heat milk and sugar in a saucepan, stirring, over low heat until sugar dissolves. Remove from heat, whisk in tea powder, cool for 5 minutes.
  • 3.
    Whisk eggs in a large bowl until combined. Slowly pour in milk mixture, whisking until combined. Strain mixture into a jug, pressing down on the dregs to push through any undissolved powder.
  • 4.
    Pour the custard into 4 small ovenproof Asian teacups and place in a roasting pan. Fill the tray with enough hot water to come halfway up sides of teacups. Bake for 20-25 minutes until custards are set, with a tiny shimmer on top when wobbled.
  • 5.
    Serve custards, hot, warm or at room temperature, with fruit.
