Once you've tried Phoebe Wood's version of the classic french fry, you'll never go back to the store-bought, fast food kind. These baked parsnip chips with lime salt are super simple, delicious and surprisingly healthy.

Ingredients (4)

  • 1 1/2 tbs sea salt flakes
  • 4 parsnips or carrots, cut into thin chips
  • 2 tbs extra virgin olive oil
  • Finely grated zest of 1 lime

Method

  • 1.
    Preheat oven to 200°C. Heat a saucepan of water over high heat until boiling. Add 1 tsp salt flakes and parsnip, and cook for 5 minutes or under slightly tender. Drain. Place parsnips on a foil-lined baking tray and drizzle with oil. Roast for 40 minutes or until tender and golden. Remove from oven.
  • 2.
    Place lime zest on a small tray and bake for 3 minutes or until dry. Combine in a bowl with remaining 1 tbs salt flakes.
  • 3.
    Sprinkle dried lime salt over parsnip chips and serve with chicken burgers.
