Banana, condensed milk and golden syrup cake

This recipe is a total crowd-pleaser; a thick dollop of cream on the side is essential. You'll need a 26cm round springform cake pan for this recipe.
Ingredients (10)
- 3 cups (450g) self-raising flour
- 1/2 cup (125g) firmly packed brown sugar
- 2 tsp ground nutmeg
- 250g unsalted butter, chopped, softened
- 4 eggs, lightly beaten
- 395g can Nestle Sweetened Condensed Milk
- 1/2 cup (125ml) coconut milk
- 2 very ripe bananas, mashed, plus 3 under-ripe bananas, halved horizontally
- 1 cup (350g) golden syrup
- Double cream, to serve

1.Preheat oven to 160°C/140°C fan-forced. Grease a 26cm round springform cake pan and line the base and side with baking paper.

2.Combine flour, sugar and nutmeg in a stand mixer fitted with the paddle attachment. Add butter and beat on medium-low speed to form crumbs. Fold in egg, condensed milk, coconut milk and mashed banana until just combined.

3.Pour 3/4 cup (270g) golden syrup into base of prepared pan and arrange halved banana over top. Pour over batter and bake for 1 hour 40 minutes, or until a skewer inserted in centre comes out clean. Cool in pan for 30 minutes, then invert onto serving plate.

4.Drizzle with remaining 1/4 cup (90g) golden syrup and serve with cream.
