Bean salad with tarator sauce

Tarator is a traditional Middle Eastern sauce which is sensational with blanched green beans.
Ingredients (8)
- 1kg green beans, ends trimmed
- 30g stale bread, soaked in a little water
- 150g toasted walnuts, plus extra to garnish
- 2 garlic cloves, crushed
- 1/4 cup (60ml) red wine vinegar
- 1 tablespoon lemon juice
- 1/4 cup (60ml) extra virgin olive oil
- 1 teaspoon sumac*, to dust

1.Blanch the green beans in boiling salted water. Refresh in cold water, drain and set aside.

2.Squeeze the bread dry, place in a food processor with the walnuts, and blend well. Add garlic, red wine vinegar, lemon juice, olive oil and 200ml water, and process until smooth. Toss the beans in the sauce, garnish with extra walnuts and dust with sumac.
