Try these burgers with an Italian twist!

Ingredients (16)

  • 2 slices white bread
  • ½ cup (125ml) milk
  • 500g beef mince
  • 1 egg, lightly beaten
  • 2 tbs chopped chives
  • ½ cup (40g) finely grated parmesan
  • 4 slices provolone cheese
  • 4 burger buns, lightly toasted
  • Tomato chutney (optional), sliced tomato, and baby cos leaves to serve

Pretty pickles

  • ½ cup (125ml) red wine vinegar
  • 2 tbs caster sugar
  • 1 tbs pink peppercorns, bruised
  • ½ tbs fennel seeds, crushed
  • ½ bunch each Dutch carrots and radishes, thinly sliced (we used a mandoline)
  • 1 small red onion, cut into 5mm rings
  • ½ Lebanese cucumber, sliced

Method

  • 1.
    For the pretty pickles, place vinegar, sugar, 1/3 cup (80ml) water, peppercorns, fennel seeds and 1 tbs salt flakes into a small saucepan over high heat. Bring to a boil for 1 minute, then cool completely. Place vegetables into a shallow container, pour over liquid to cover and leave 20 minutes.

    Place bread and milk into a medium bowl. Soak 5 minutes. Gently squeeze bread and discard excess milk. Place bread in a large bowl with mince, egg, chive and parmesan. Season and combine well. Divide mixture into 4 and shape into patties. Place onto a plate, cover and chill 30 minutes to firm up.

    Heat a barbecue or grill pan over medium-high heat. Cook patties 3 minutes each side or until cooked. Top each with cheese (residual heat will melt it). On each bun base place chutney, tomato, cos, burger, drained pickles and bun lid.
