Bircher muesli
Pan-fried apple makes a sweet and tasty topping to this delicious, crunchy muesli.

Ingredients (16)

  • 500g rolled oats
  • 250ml apple or orange juice
  • 250ml (1 cup) milk
  • 250ml (1 cup) cream
  • 1/4 cup caster sugar
  • 60ml (1/4 cup) honey
  • 125ml thick Greek yoghurt
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sultanas
  • 50g slivered almonds, toasted
  • 200g fresh fruit (such as grated apple, sliced apricots, blueberries and raspberries - in winter use dried fruits)
  • 2 teaspoons cinnamon sugar, optional*

Pan-fried apple

  • 2 red-skinned apples
  • 40g butter
  • 4 tablespoons maple syrup
  • 1 teaspoon cinnamon

Method

  • 1.
    Place the oats in a large bowl and add the juice. Cover and refrigerate overnight.
  • 2.
    Fold in remaining ingredients except the cinnamon sugar.
  • 3.
    To make the pan-fried apple, slice the apple into 1/2cm slices. Melt butter in frying pan, add maple syrup, cinnamon and apple and cook over a low heat for 5 minutes until golden.
  • 4.
    Serve with extra fresh fruit, pan-fried apple and if desired, sprinkle with cinnamon sugar.
