Blueberry tea cocktail

Ingredients (11)
- 225ml blueberry verjuice (recipe below)
- 225ml black tea syrup (recipe below)
- 300ml soda water
- Ice cubes, to serve
- Fresh blueberries, to serve
- Mint sprigs, to serve
Blueberry verjuice (makes 500ml)
- 250g frozen blueberries (or substitute the berries of your choice, such as mulberries or raspberries)
- 2 cups (500ml) verjuice
Black tea syrup (makes 1L)
- 40g black tea leaves
- 900ml boiling water (100°C)
- 200g caster sugar

1.For the blueberry verjuice, combine frozen berries and verjuice in a bowl. Chill overnight to macerate. Strain into a bottle (reserve solids for making jam or coulis). Store in the fridge.

2.For the black tea syrup, brew tea, water and sugar together for 8 minutes. Strain into a bottle (discard solids). Store liquid in the fridge.

3.When ready to serve, combine 225ml blueberry verjuice and 225ml tea syrup in a jug, then top with soda water. Top with ice cubes, fresh blueberries and mint sprigs to serve.
Recipe Notes
Begin this recipe 1 day ahead. Using frozen berries for the verjuice allows the fruit to break down. Remaining verjuice and black tea syrup will last in the fridge for 1-2 weeks.
