Enjoy the bold flavours of Spanish fare in this homestyle dish.

Ingredients (6)

  • 200g marinated white anchovies (see note), drained
  • 1 white onion, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 100ml extra virgin olive oil
  • 100ml white wine vinegar
  • 2 cups flat-leaf parsley leaves

Method

  • 1.
    Lay the anchovies in a glass or ceramic dish. Scatter over onion and garlic, then pour over oil and vinegar. Season with pepper, then cover and marinate in the fridge overnight.
  • 2.
    The next day, transfer to a serving dish, stir through the parsley, then serve as tapas with olives and cod salad.
