Brioche waffles with bacon, apple & walnut butter
Ingredients (13)
- 200g streaky bacon, rind removed, cut into 3cm pieces
- 50g unsalted butter, chopped
- 1/4 cup (60g) brown sugar
- 3 green apples, peeled, cores removed, cut into 1cm-thick wedges
- 1/4 cup (30g) chopped walnuts (we used Woolworths Macro)
- 1 tbs runny honey
- 1 tsp apple cider vinegar
- 2 eggs, lightly beaten
- 1/2 cup (125ml) milk
- 1 tbs caster sugar
- 1 tsp vanilla extract
- 1 600g brioche loaf, cut into 5cm-thick slices
- Vanilla ice cream, to serve

1.To make the bacon and caramelised apple butter, heat a large non-stick frypan over high heat. Add bacon and cook, turning, for 3-4 minutes or until golden and crispy. Remove with a slotted spoon and set aside. Add butter, brown sugar, apple, walnut and honey, reduce heat to medium and cook, stirring occasionally, for 5-6 minutes or until caramelised. Add vinegar and stir to combine. Return bacon to pan and toss to combine. Set aside and keep warm.

2.Preheat a waffle maker according to the manufacturer’s instructions.

3.Whisk eggs, milk, 1/4 tsp salt flakes, sugar and vanilla together in a large bowl. Pour into a deep-sided tray. Add brioche and partially soak in egg mixture, then turn to coat. Lightly grease the waffle maker and, in batches if necessary, add brioche and cook for 3-4 minutes or until golden and crisp. Repeat with remaining brioche.

4.To serve, place waffles on serving plates and top with apple butter and ice cream.
