Bruleed cheese-stuffed figs

Make the most of sweet, jammy figs while they’re in season with this elegant starter. The natural sweetness of the figs contrasts beautifully with the smooth, creamy cheese and a fragrant touch of thyme, while crunchy walnuts and a caramelised sugar crust on top add extra elements of surprising textural contrast. Bruleed cheese-stuffed figs

Ingredients (6)

  • 5 figs, halved lengthways
  • 125g soft cheese (such as brie or camembert), at room temperature, roughly chopped
  • 2 tsp honey
  • 2 tbs finely chopped walnuts, toasted
  • 1 tsp finely chopped thyme leaves, plus extra leaves, to serve
  • Caster sugar, to dip

Method

  • 1.
    Using a small spoon, scoop out the centre of each halved fig, being careful not to pierce the skin, and transfer fig flesh to a food processor. Add cheese, honey and a pinch of salt flakes to food processor. Whiz until smooth. Transfer to a medium bowl and stir through walnuts and thyme.
  • 2.
    Spoon mixture into fig skins to fill, and use a small knife to spread the filling flat across the entire cut face of the fig. Dip cut side into sugar to coat thoroughly with sugar, then use a kitchen blowtorch to caramelise the sugar on each fig.
  • 3.
    Serve warm, sprinkled with extra thyme leaves.
