Brussels sprout, bacon and sage with aged cheddar
Brussels sprout and bacon topped with melted cheese is the perfect side dish.
Ingredients (11)
- 2 tbs extra virgin olive oil
- 2 red onions, finely chopped
- 1kg brussels sprouts, cut in half
- 2 garlic cloves, crushed
- 100g unsalted butter, roughly chopped
- 200g rindless smoked streaky bacon slices, cut into 3cm strips
- 1 cup (250ml) white wine
- 2 tbs finely chopped sage leaves
- 1 tbs baby capers, drained, finely chopped
- 190g aged cheddar, finely grated
- 1 cup (50g) panko breadcrumbs

1.Preheat oven to 220°C.

2.Heat olive oil in a 24cm x 6cm deep flameproof and ovenproof dish over high heat. Add onion, brussels sprouts and garlic. Cook, stirring occasionally, for 5-6 minutes until garlic is softened. Scatter over the butter and bacon, and stir to combine. Cook, stirring occasionally, for 6-8 minutes until bacon starts to brown. Add wine, scraping the bottom of the pan with a wooden spoon and cook until reduced by half.

3.Remove from the heat, season and stir in sage and capers. Scatter with cheese and breadcrumbs. Bake for 15-20 minutes until golden. Serve immediately.
