This traditional caponata showcases the vibrant colours of in season capsicum.

Ingredients (4)

  • 1/4 cup (60ml) olive oil
  • 2 onions, finely sliced
  • 2 garlic cloves, crushed
  • 6 capsicum (2 each of red, yellow and green), roasted, skins and seeds removed, sliced

Method

  • 1.
    Heat oil in a frypan over very low heat, add onion, garlic and capsicum and cook, stirring occasionally, for 20 minutes. Serve at room temperature.
