Caprese pasta salad

Ingredients (7)
- 500g large pasta shells
- 400g mixed baby roma tomatoes, larger ones halved or sliced
- 1/3 cup (80ml) extra virgin olive oil
- 2 tbs white balsamic dressing
- 1 garlic clove, crushed
- 2 x 180g tubs baby bocconcini, drained, torn
- 1 bunch basil, leaves picked

1.Cook the pasta in a large saucepan of boiling salted water following packet instructions. Drain and cool under cold running water. Drain well.

2.Meanwhile, place tomatoes in a large bowl and season generously with salt flakes. Toss well and set aside for 10 minutes.

3.Using a fork, whisk oil, vinegar and garlic in a small bowl. Season with salt flakes and pepper.

4.Add pasta to tomato along with bocconcini, basil and dressing. Toss until well combined and serve.
