Caprese pasta salad
Add pasta to your caprese salad for that extra Italian flair.

Ingredients (7)

  • 500g large pasta shells
  • 400g mixed baby roma tomatoes, larger ones halved or sliced
  • 1/3 cup (80ml) extra virgin olive oil
  • 2 tbs white balsamic dressing
  • 1 garlic clove, crushed
  • 2 x 180g tubs baby bocconcini, drained, torn
  • 1 bunch basil, leaves picked

Method

  • 1.
    Cook the pasta in a large saucepan of boiling salted water following packet instructions. Drain and cool under cold running water. Drain well.
  • 2.
    Meanwhile, place tomatoes in a large bowl and season generously with salt flakes. Toss well and set aside for 10 minutes.
  • 3.
    Using a fork, whisk oil, vinegar and garlic in a small bowl. Season with salt flakes and pepper.
  • 4.
    Add pasta to tomato along with bocconcini, basil and dressing. Toss until well combined and serve.
