Caramel oranges in hot coffee syrup
Caramel, oranges and coffee might seem like an unusual combination, but together, the flavours sing.
Ingredients (4)
- 6 oranges
- 1 cup (220g) caster sugar
- 100ml freshly brewed coffee
- Slivered pistachios and whipped cream, to serve

1.Using a sharp knife, remove orange rind and pith. Set oranges aside. Remove pith from half the orange rind (discard remaining rind), then slice rind into thin strips. Set aside.

2.Place sugar in a saucepan large enough to fit all the oranges in a single layer. Add 100ml cold water and stir over low heat until sugar dissolves. Increase heat to medium and cook, without stirring, for 5 minutes or until mixture turns a golden caramel. Remove from heat, then carefully add 100ml boiling water. Return pan to heat and cook for 1-2 minutes until caramel dissolves. Add coffee, stir to combine, then return oranges and add reserved orange rind to the pan. Simmer for 15 minutes, then remove oranges and place in glass bowls.

3.Increase heat to medium-high and reduce sauce for 3-4 minutes until syrupy.

4.Pour coffee syrup over oranges. Cool, then refrigerate until ready to serve.

5.Top with pistachios and serve with whipped cream.
